Oh, this was a great delivery! I think most of the excitement is because I can eat the produce this week and partially because we got mushrooms! My favorite vegetable for sure. I really had no plan for dinner this Saturday night but I think it’s shaping up to be a delicious one. I’m thinking BBQ.
My sister sent me a pin on Pinterest the other day for BBQ acorn squash- basically you just slice it up, lather on the sauce and grill it. We could definitely use the George Forman for that. We have cabbage leftover in the fridge from previous weeks for a slaw, and this week’s bean delivery would be great as baked beans. I’ve never made baked beans but they can’t be that difficult, right? Lastly, we have a TON of frozen green beans in the freezer and those, along with the mushrooms, would be delicious in my green bean casserole. Sounds like a lot of food but that only means delicious leftovers!
No plans for the frozen tomato puree but the frozen corn will most likely be used next week in our tacos. I got a tortilla press a couple of years ago for Christmas and to be honest, we haven’t played around with it too much. We are both looking forward to perfecting a tortilla recipe- and don’t mind having to eat anything resembling Mexican cuisine. The lettuce was packed as my lunch- a monster green salad- and the microgreens are going to be added to garnish our broccoli soup tonight for dinner.
Which leaves me with the apples. I normally eat an apple a day and love when we get these, however, we still have about ten pounds of apples leftover from the juice reboot (that we were planning on using the last five days). I’m going to have to make a pie, applesauce or something, because I can’t let those go bad. I’m leaning toward the applesauce because I can add that to my morning oats with peanut butter.
I’ve got a busy weekend ahead of me, including some hiking in the Catskills, and can’t wait to jump in. I’ll hopefully see some signs of Spring in the mountains aka melting snow. Happy trails and healthy eating!
