Wow-zers. It has been quite a while since my last update, and I’ve got no excuse other than I’ve been enjoying the extra free time in my life. Nothing better than leaving work to walk home and not have to drive to the Albany campus for work… or scramble to get last-minute homework done. I’ve actually gotten a head-start for my upcoming summer course; we’ll see how long that lasts.
This past weekend was Mother’s Day- a swell day. Because I’m broke and am anticipating getting her something special in China, I didn’t buy her anything. Instead, I made her a cute card and decided to wash/vacuum her car. Who doesn’t like a clean car? When I arrived that morning she was busy cooking in the kitchen, and goodness did it smell delicious!
She was whipping up a “healthier” version of chicken cordon bleu: a thin slice of chicken with some black-forest ham and light swiss cheese rolled in the middle. It was then dipped in egg whites, panko crumbs and popped into the oven to bake until cooked through. So good!

This weekend also brought the most kick-ass workout ever! (excuse my language) I finally dragged myself over to NY Boxing for my free first workout and I’m hooked! It definitely helped that a fierce friend of mine who already belongs to the gym was there and kept me laughing along the way- because I was in pain! But in a very good way! It was a complete body shock and I am STILL sore in my arms and abs. I am def. going to sign up once I return from China. No excuses.
And last but not least, last night was a much needed night out with “the two best friends that anyone could have!” We finally made it over to Hana– these two have been raving about this restaurant for a year! And it was worth the wait! I started off with a clear soup with mushroom slivers and some shared edamame. We all order two hand rolls and agreed on a specialty roll to share: the Angry Dragon! It was so good- I honestly could have had three more rolls– but that’s the danger with sushi– so good but so many calories!
This week will be filled with last minute shopping (protein bars, small containers for my shampoo & conditioner, etc.), laundry/packing, and enjoying my last few nights in my own bed.
I’ll make sure to squeeze in one quick post before my flight on Sunday; I’ll be blogging for the college throughout the duration of the trip.
