So many greens! And to be honest, I’m kind of over them right now. Gasp! Okay, I’ll admit, I’m one of those people who will find something I love and will eat the $hit out of it until it makes me wanna barf. And my last obsession was a salad. Specifically the goddess dressing from Trader Joe’s but now I can’t fathom eating another salad. Our refrigerator is slowing filling up with salad greens now that I’ve stopped taking them for lunch but thankfully, the beau still packs them up each and every day.
Lucky for me, sautéed greens aren’t an issue during this funk. The kale, mustard greens and spinach will all be cooked this way- added to one pot meals, including a noodle dish. During my last trip to TJ’s, I found a package of fresh rice noodles. I can’t wait to try them- possibly with some shredded carrots, mushrooms, scallions and sesame oil or some type of miso soup. Have you seen them there/purchased the noodles before? I found them hiding out in the meat/sushi section. Odd.
I was super excited to see the beets this week! We have so many parsnips, probably 50 and that’s not an exaggeration, to eat. My plan (for the past couple of weeks actually) has been to roast them up with some mixed potatoes. These beets will add a ton of flavor- the beau isn’t a fan of roasted root veggies, or at least these, so they are alllllll mine. I forget this meal because of the heat lately. Third floor living does occasionally have its downfalls- and the summer heat is one of them.
No big plans this weekend- a nice breather before the summer shenanigans kick-in. Hopefully I’ll have time to prep my meals for the upcoming week and do a little cleaning in the apartment. The fire smell is finally barely there- thank goodness for being able to keep the windows open 24/7. Count your fortunes, now matter how small, and remember to plop a kiss on the cheek of someone you love.
