Not going to lie, I took this photograph this afternoon. The beau was washing the arugula and I was ready to dive into the bibb lettuce. We had salads on our minds and we were starving! The majority of the day was spent visiting different greenhouses and farms and then planting everything on our back porch. It finally looks like spring has sprung! It surely is amazing what a difference the weather can be year to year- last year I did our planting on Earth day. I still have a little more planting to do once I get more supplies, but I will surely give you a tour soon.
Back to the veggies, no big plans this week. The parsnips I should roast up, along with the dozens of other parsnips that are being stored in the bottom of our fridge that we’ve accumulated over the colder months. They aren’t the beau’s favorite root veggie, so I may just add them to my salads throughout the week. We received an email giving us a head’s up that the leeks may not be the freshest in the middle- darn cold weather! If they are good and fresh, I may attempt a potato leek soup for my dear friend that is home with her newborn. She is a huge fan of my cauliflower leek soup, however we don’t want any gassy newborns now do we?
The dandelion greens will be sautéed up this evening as a side for dinner. The beau has been looking forward to cooking me a big meal today and has decided on eggplant rollatini with a local, spicy red sauce with a side of pasta. We haven’t had pasta in probably a month! I’m cooking the greens and will keep them simple with just a splash of olive oil and salt and red pepper to taste. It’s currently in the oven and smells delicious!
The apples will be devoured this week, by me, paired with cookie butter; my guilty pleasure. I’m not going to lie, I was a little disappointed to see only two apples because I know I have a whole jar waiting for me. Lastly, the radishes will most likely be added to the beau’s salads. He loves them and that’s perfectly a-okay with me.
I don’t know about you, but I can’t believe that it’s almost June. The past couple of weeks have been so busy and the upcoming month is no different for us. I’m looking forward to more local produce and spending more time with meal preparation. Healthy food surely keeps me going! Cheers to a new week and new memories, my friends!
