Dear Loyal (and New!) Readers: You have all made my week that much better. I cannot tell you how much I appreciate your kind words and advice during this difficult time in my life. Many many thanks! Dear Fake Eyelashes: I wish you weren’t so tricky to put on because I swear, long lashes and a fresh application of mascara can make any woman feel brand spankin’ new. Dear Frienemy 641: So, how far along are you? You’ve gotta be at least seven or eight weeks, right?
Talk about excitement people! Last Monday I had a RECORD amount of hits/views and it’s kind of overwhelming to think about it actually. I know I say this frequently, but subscribe! Not only do you get an email update when I post a new blog but it also helps my statistics. The more subscribers, the more likely I will purchase my own domain name to become… a professional blogger? I think so! Many people ask me if I have any interest in furthering my career in writing– and I must be honest, no. I don’t think it would remain fun if it became my job. But I could be wrong. Also, check out my Facebook page– I’ve added a mini quiz this week to see what my readers are looking for. So far, ya’ll want to know more about my workouts. And that I can do!
But not this blog. After working out hardcore for the past nine days, I’ve decided to take a few days off to relax. I must admit that I do miss that workout and tiredness at the end of the day. I’ll make sure to update as soon as I get back in the gym/hit the streets. I have a race just under a month away today that I’m going to run and would like to get another PR. Did I just say that outloud? The pressure is on! It’s the 5th Annual Run/Walk for Trooper Joseph Longobardo– one of the Montenaro’s close family friends that was killed in the line of duty. The cost is only $20 and all proceeds go to the New York State Trooper Foundation. Click here for more information/registration. You know, it’s the small things in life that I’m enjoying recently. Like Friday, a former co-worker brought in donuts- score! Day already awesome. It was Friday AND I got to wear jeans. And to top off my last work hour of the week, I got offered a new office (to match my new title of course!). I’ll have more room, a big ‘ol window, more shleves and a dry erase board. This past week couldn’t have ended any better.
Tonight I think I’ll share with ya’ll a new recipe that I whipped up this evening for dinner. After a day of lounging and on/off gloomy weather, I was looking for some comfort food. I pulled together these few ingredients that I recently randomly picked up at the market. I think I’ll call it rosemary dinner hash!
Ingredients: 3 medium red potatoes, rosemary, 1/2 pound ground turkey (or chicken, or beef), EVOO, leftover vegetable (I used kale of course), salt & pepper, garlic seasoning.
To Prepare: Wash the potatoes and cut into bite-sized pieces. Par-boil until they are almost ready to break into smaller pieces when poked with a fork. In a pan on medium heat, warm EVOO and garlic seasoning. I personally used this AWESOME blend from Simply Organic (garlic ‘n herb) that I pick up at the co-op. Add potatoes and start to brown. They started to stick after about five minutes, so I added a *splash* of organic chicken broth (maybe about 3 tablespoons worth). Add the ground turkey and rosemary-stir until it’s all cooked through. Finally, add about 3 HUGE handfuls of kale or vegetable of choice and cover until wilted. Remove from heat and add some fresh black pepper. So delicious. So quick. And so hearty on this chillier evening. Can you tell I can’t wait until Fall!?!
I know, it doesn’t have the best presentation but my apartment smells delicious– thanks to the rosemary! And I can promise you that it tastes even better than it smells!
Woah. I have so very much to write about this upcoming week before (YIKES!) classes start back up. But hey, I can’t complain. This is my last semester with only two courses and I will have my MBA!
